Green Goddess Grilled Cheese

Crisp on the outside, gooey on the inside, this sandwich is sure to become a new go-to comfort meal. 

Ingredients:

  • 2 slices of bread

  • 2-3 slices of cheese (mozzarelle, cheddar or provolone work well)

  • 2 tbsp microgreens pesto

    • See below

  • 1 tsp butter or olive oil

Microgreens Pesto

  • ½ cup microgreens

  • 1 tbsp olive oil

  • 1 tbsp grated parmesan

  • 1 galic clove minced

  • Salt to taste (optional)

Instructions:

  1. Make the pesto: Blend all pesto ingredients until smooth.

  2. Assemble the sandwich: Spread pesto on one or both bread slices. Add cheese and close the sandwich.

  3. Grill: Heat butter or oil in a pan over medium heat. Cook sandwich until golden and cheese is melted, about 3-4 minutes per side.

  4. Serve: Slice and enjoy!
