Sausage & Spaghetti Squash Bowl

This Sausage & Spaghetti Squash recipe is a satisfying dish that swaps traditional pasta for roasted spaghetti squash. It's quick, hearty, and perfect for busy weeknights, with just a few ingredients and endless ways to customize. 

Ingredients:

  • 2 sausages, sliced

  • 1 medium spaghetti squash

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Optional: fresh basil, 1 clove garlic, minced

Instructions

1. Cook the Squash

  • Cut squash in half lengthwise, scoop seeds out, drizzle with oil, salt, and pepper.

  • Roast cut-side down at 400 for 35-40 minutes.

2. Cook the Sausage

  • Slice or crumble sausage into pan over medium heat until browned (8-10 mins).

3. Serve

  • Scrape squash into strands, mix with sausage, and top with cheese or seasoning if desired.
